ФУКС Арон Абрамович (1867 – 1941, Минеральные Воды Ставропольского края), химик. Проф. (1934). Окончил в 1892 хим. ф-т Харьковского технол. ин-та. В 1902–18 – на Боровенском, Ильменском, Шебекинском спиртовых з-дах (винокур, затем винокур-ректификатор). С 1918 – в Укрспиртотресте: чл. правления и зав. производственно-техн. отд. С 1930 зав. кафедрой технологии спиртового произ-ва Киевского технол. ин-та пищевой пром-сти, с 1934 – зав. кафедрой технологии бродильных веществ. Одноврем. руководил спиртовой секцией Всеукр. НИИ ферментативной и плодоовощной пром-сти. Науч. работы посв. изучению влияния энзимов на сохранность картофеля, антибиотич. действию микроорганизмов. Разработал методы получения спирта из новых видов сырья (топинамбура, цикория и др.). Автор первой на рус. яз. моногр. (1902), посв. вопр. технико-хим. контроля и орг-ции винокуренной пром-ти, и др. науч. печ. работ. В 1935 Наркомат пищ. пром-сти СССР учредил ежегод. спец. фонд им. проф. А.А.Фукса для премирования лучших науч. работ в обл. спиртовой пром-сти и 3 ежегод. стипендии им.
